What is Dahi Vada?
Dahi vada is a delicious dish famous in the southern part of India. You can make it at home very easily but try to eat less because it is not good for your health. Dahi means Curd and we know that curd is very good for our health it may control blood pressure. And it is made with black gram.
Let us see the ingredients of making Dahi Vada- For vada– 1/2 cup black gram, 1/2 inch ginger, 1 green chilli, 1/2 to 3/4 teaspoon cumin seeds, 1/4 teaspoon salt(as per requirement), 1/8 teaspoon asafoetida, 2-4 tablespoons chilled water, 6 chopped cashew nuts, Oil for fry.
For Green Chutney:- 1 cup coriander leaves, 1/4 cup mint leaves, 1 green chilli, 1/4 inch ginger, 1 clove garlic, 1/2 teaspoon lemon juice, 1 tablespoon roasted gram, 1/4 teaspoon salt as per requirement, 2 teaspoon water.
For Tamarind Chutney:- 1/4 cup Tamarind, 1/2 cup jaggery, 1 cup water, 1/2 teaspoon salt(as per requirement), 1/4 teaspoon dry ginger powder, 1/4 teaspoon fennel powder, 1/4 to 1/2 teaspoon red chilli powder, 1/2 teaspoon coriander powder, 1/8 teaspoon asafoetida.
Other Ingredients:- 2 and 1/2- 3 cups curd, 1 tablespoon, powdered sugar, 1/2 teaspoon salt(as per requirement), 1 teaspoon roasted cumin powder, 1/2 teaspoon red chilli powder, 1 teaspoon chaat masala, 1/4 cup chopped coriander leaves.
Chutney ingredients are given paste them all in a mixture grinder then your chutney is perfectly ready.
Let us see the process of making Dahi Vada- Wash black gram and soak overnight in water then drain off. Now take gram, chilli, ginger, garlic, cumin seeds, salt, cashew nuts and little water then make a smooth and fluffy batter. Don’t use to water. Then take soak moong dal for 3 hours, drain off and make a fine and smooth paste. Add both pastes and mix together add some salt then whisk for 5 minutes. Now make a soft and thick batter then heat a pan and heat oil. After heating takes a wet spoon perfect round shape. Take some batter and put it into the hot oil fry them in medium flame until golden brown.
Now take hot water then add some salt and Asafoetida mix well. Then soak in hot water it helps to make vada soft and rest for 30 minutes. Now take fresh and thick curd, add sugar, and salt to it. then add half a cup of water. Now mix well. After 30 minutes take soak vada and squeeze slightly. Now take a plate and put vada on it and sweetened curd put curt into the top of vada green chutney, tamarind chutney pinch of chilli powder cumin powder, chaat masala, boondi, chopped coriander leaves.
